Black Pepper

In 146 of 296 dishes. Pre-ground and whole peppercorns are effectively different spices, and they go in at different moments.

Pre-ground pepper has already lost most of its aroma

Pepper's bite comes from piperine and its smell from volatile terpenes in the skin. Piperine is stable and lasts; the aromatics disappear within weeks of grinding.

Which is why a jar that has been open a long time is merely hot and not fragrant. A pepper mill ends the problem outright β€” it is the cheapest improvement this site can recommend.

Black, white, green and red are the same berry, processed differently

  • Black: unripe berries, dried. The skin wrinkles and holds the aroma. This is the default.
  • White: ripe berries with the skin removed. Less aromatic, with heat and an earthy note in front. Also used to keep black specks out of a white sauce or a clear broth.
  • Green: unripe, brined or freeze-dried. Fresh-smelling and mildly hot.
  • Pink "peppercorns" are usually not pepper at all, but the berry of a different tree.

When it goes in decides the result

Piperine survives heat; the aromatics do not. So added at the start of a long braise, only the heat is left. That is why carbonara grinds it coarsely in at the end β€” while whole peppercorns in the pot for suyuk are there to suppress off-smells, a different job entirely.

Conversely, pepper applied before a hard sear can burn, coarse grinds especially. If the surface is going to take real heat, salt it first and pepper it after cooking (blooming spices).

Its heat is not chilli heat

Piperine triggers the same TRPV1 receptor as capsaicin, but binds weakly, so the heat is shallow and fades fast. Pepper can be used generously without lingering the way chilli does; it announces itself through aroma instead (chilli and heat).

The Sichuan pepper in mapo tofu is a third thing again β€” hydroxy-alpha-sanshool, which produces numbness β€” and does not substitute for pepper in either direction.

Storage

  • Whole peppercorns keep for years. Ground, count on three months before the aroma is gone.
  • Sealed, away from heat and light. The shelf above the hob is the worst place in the kitchen.
  • If they crumble instead of grinding cleanly, they are too old.

Substitutes

  • White for black is not a clean swap: different colour, different aroma. Use the same quantity and expect a different result.
  • Sichuan pepper is not a substitute; it is another ingredient.
  • With no pepper at all, a little ginger covers some of the missing bite. Nothing covers the aroma.
