Gibanica (Crumpled Phyllo Set in Egg and White Cheese)
Serbia's national pie: raw phyllo crumpled sheet by sheet, dipped in a mixture of egg and brined white cheese and packed into the tin. Only the bottom and top sheets lie flat; the rest of the pastry is the filling rather than the layers. Wet raw dough does not turn to paste here because what holds it is the egg setting around it, not its own dryness.
