Oil Down (Breadfruit and Taro Leaves Cooked Down in Coconut Milk)
Grenada's national dish: breadfruit, taro leaves, salted meat and flour dumplings layered in one pot under turmeric-yellow coconut milk and cooked until the liquid is gone. The "down" in the name means cooked down, and the moment the coconut oil is all that is left is the sign that it is ready. The taro leaves go in first and cook longest, and the reason is not texture.
