Tavče Gravče (White Beans Baked in a Clay Pan)
North Macedonia's national dish. Soaked white beans are boiled once and drained, then boiled again in fresh water with a whole onion and dried chillies. When the onion is soft it is lifted out, chopped and fried briefly in oil with flour and paprika, and stirred back into the pot. The beans then go into an earthenware tava and bake in the oven. The onion, the slowest aromatic of all, is cooked in the bean water before it ever meets the fat.
