Fregola with Clams (Toasted Semolina Pearls Cooked in the Sauce)
A Sardinian pasta of semolina rubbed into small pearls and toasted in the oven. It is not boiled in water: it goes straight into a clam and tomato sauce and cooks by drinking the clams' liquor, and the toasted grain is what gives the sauce its depth.
Ingredients
- fregola · toasted (tostata); if untoasted, see Variations300 g
- clams (vongole or small arselle) · purged of sand1 kg
- olive oil4 tbsp
- garlic · thinly sliced2 cloves
- dried chilli flakes1 pinch
- dry white wine100 ml
- cherry tomatoes · halved250 g
- hot water · fish stock is better600 ml
- flat-leaf parsley · chopped1 handful
- salt · at the end, to taste
Steps
- ⏲ 60 min
Purge the clams in water salted like the sea (30g salt per litre) for an hour in the dark. Lift them out and rub the shells together under running water.
- ⏲ 4 min
In a wide pan warm 2 tbsp olive oil with the garlic and chilli over low heat, just until the garlic smells. Add the clams and wine, cover and cook over high heat for 3-4 minutes until they open.
Lift out the clams and strain the liquor in the pan through a fine sieve or kitchen paper to catch the sand. That liquor is the sauce's seasoning. Take about half the clams out of their shells.
- ⏲ 5 min
Put the remaining olive oil in the same pan and cook the tomatoes for 5 minutes, until the skins split and they give up their juice.
- ⏲ 14 min
Add the fregola and stir for a minute to coat it. Pour in the strained liquor and then hot water a ladle at a time, at a gentle simmer, stirring now and then, for 12-15 minutes, until the pearls are tender with a slight core.
- ⏲ 1 min
Return the clams for a minute to heat through. Taste now and only now decide on salt. It should still be a little soupy.
- ⏲ 2 min
Off the heat, add the parsley and a thread of olive oil, rest 2 minutes and serve.
Variations
- If your fregola is untoasted. Spread it on a tray and bake at 180°C for 10-15 minutes, until the pearls are a mix of pale gold and dark brown. They do not need to be even.
- Mixed seafood. Mussels, pieces of fish and prawns instead of clams alone. The photograph on this page is that version, cooked in a wide pan.
- As a soup. Double the water and serve it as a brothy soup.
- Vegetable. Courgette or artichoke instead of clams, and vegetable stock instead of fish.
Tips
- Do not boil it in water first. It has to cook in the sauce for the clam liquor to end up inside the pearls.
- Salt at the very end. The clam liquor is already as salty as the sea.
- Always strain the liquor. Even purged clams leave sand in the pan.
- Take the clams out early. Fifteen minutes alongside the fregola turns them to rubber.
More detail and the reasons why (1)
- The same semolina, taken the other way. Couscous also rubs semolina into small pellets by hand, but it steams them and never lets them colour. Fregola toasts the pellets first in a dry oven. The surface browns and picks up a roasted-grain flavour (browning), and in a sauce made of nothing but clams and tomato there is nothing else to give it that depth. Then, instead of being boiled and drained, the pasta cooks in the sauce itself, so the liquor the clams release (the seawater the shells pour out in moules frites) goes into the pearls. Adding the liquid a ladle at a time looks like risotto, but the aim here is not to rub starch loose; it is to give the pearls only as much as they can drink.
The basics behind this dish
- Dough and Gluten: When to Build It and When to Avoid ItThe same flour and water becomes a dumpling wrapper or a tender pancake. The difference is whether you built gluten or avoided it — and kneading and resting do different jobs.
- Why Sauces Split: Emulsions and Pan SaucesA cream sauce breaking and a carbonara scrambling are the same failure. Temperature and emulsifiers — plus how to bring a split sauce back.
- Knife Skills: Grip, Cuts, and Why Size MattersHow you hold the knife matters more than how fast you cut. The pinch grip, the claw hand, and why uniform size is a cooking decision rather than a cosmetic one.
