Chicken Kyiv (Crumbed Chicken with a Garlic Butter Core)
A Ukrainian cutlet: chicken breast beaten thin, wrapped around a baton of garlic butter, breaded twice and fried. The whole dish is the moment the knife goes in and the melted butter comes out under pressure, and every step before it exists to reach that moment. Freezing the butter first, overlapping the seam and crumbing it twice are not flourishes: while it fries, the inside of that parcel is a pressure vessel.

Borscht (Beet Soup)
Ukraine's iconic beet soup, deep ruby-red. Built on a beef broth with cabbage, potato, and carrot, it's simmered sweet-and-sour and finished with a dollop of sour cream (smetana) and dill. Ukrainian borscht culture was added to UNESCO's heritage list in 2022.
