Grilling: Distance, Zones, and Flare-Ups

On a grill the heat is radiant, so distance is temperature. Why you build two zones, why a flare-up means you are already late, and why sugary marinades go on at the end.

A pan cooks by contact (conduction). An oven cooks by moving hot air (convection). A grill cooks by radiation β€” and radiant heat falls off with the square of the distance.

Double the gap between fire and food and the heat drops to a quarter. The real control on a grill is not the burner setting, it is the height of the grate and where on it the food sits. That one fact is most of grilling.

Build two zones

Charcoal or gas, start by making a hot zone and a cool zone: bank the coals to one side, or light only half the burners.

  • Thin food (under 1.5cm) β€” starts and finishes on the hot side. Yakitori, yakiniku, bulgogi. The outside colours in the time the inside needs.
  • Thick food β€” comes up to near its target on the cool side, then takes its colour on the hot side at the end. Do it the other way round and the outside burns before the middle is done (cooking meat).

Without zones you have no control at all, and nothing to do about burning except keep flipping.

A flare-up means you are already late

Fat dripping into flame is not "a good sear developing". Those flames deposit soot β€” carbon from incomplete combustion β€” onto the surface of the meat. The smell of browning and the bitterness of soot are unrelated things.

The fix is not a squirt of water, it is moving the food to the cool zone. Water throws ash up and makes the coal bed uneven. Fatty cuts should start on the cool side in the first place.

Skewers solve two problems at once

A skewer is a tool, not a presentation.

  • It forces uniform size. Pieces cut alike on one skewer finish alike.
  • It lets you turn everything at once. Turning small pieces individually means the first ones are burning while you work on the last.

Two practical notes: soak bamboo skewers thirty minutes so they do not burn, and thread two side by side so the pieces cannot spin when you turn them. There is a reason souvlaki, satay and yakitori are all skewer dishes.

Sugar in the marinade goes on at the end

Sugar, mirin, honey and fruit juice start burning around 150Β°C, and the surface of food over direct fire is far hotter than that.

So a sugary glaze belongs in the last two or three minutes, brushed on in two or three coats. Applied from the start it blackens before the centre is cooked. That is why yakitori tare is layered on repeatedly as it cooks, and why marinated bulgogi does better if you shake the marinade off before it hits the grate and brush the rest on later (what marinades do).

Salted meat and marinated meat are different dishes

Same grill, opposite approach.

  • Salt only β€” yakiniku grills bare and gets dipped afterwards. With no sugar on the surface you can use full heat and chase colour freely. Salt goes on just before it hits the grate (salt and seasoning).
  • Marinated β€” bulgogi, jerk chicken, tandoori chicken: the marinade is the identity. This side wants medium heat, more time, and active management of the burning risk.

Yogurt-marinated tandoori chicken sits between the two β€” the milk protein scorches readily, but it also clings and keeps the meat from drying.

Half the work happens after it comes off

  • Thick cuts rest. Five to ten minutes lets the juice redistribute (cooking meat).
  • Thin cuts do not rest. They only get cold. Eating yakiniku straight off the grill is correct.
  • Slice against the grain. With something pre-sliced like bulgogi that decision was made before cooking.

Approximating it indoors

You cannot fully reproduce a grill without one β€” the radiant intensity and the smoke are both missing.

The closest thing is a cast iron grill pan, properly preheated (heat control), and an oven's broiler gives you radiant heat from above, which means the distance rule transfers directly. With a pan the thing that matters most is not crowding it: crowded, the steam has nowhere to go and the food steams instead of grilling.
