
Kabab Koobideh (Persian Minced Kebab)
Iran's national kebab: ground lamb kneaded with nothing but grated onion, pressed onto flat skewers and grilled over charcoal. The ingredient list is startlingly short — squeezing the onion dry and kneading long enough are what make or break it. Served over saffron rice with sumac.
Ingredients

Steps

Grate the onion finely, then wring it out in cheesecloth or a fine sieve until barely damp. Leftover water makes the paste slide off the skewer — this step decides whether the dish works.

Knead the ground meat with the squeezed onion, salt, pepper and turmeric for a full 10 minutes, pressing with your palm. It must turn tacky and cling to itself before it will cling to a skewer.

Cover and chill for at least an hour. Cold paste holds its shape, and the firmed-up fat survives the grill.

Rinse the basmati and boil it in salted water to al dente, drain, then steam covered on low for 15 minutes to make chelow. Toss part of the rice with 1 tbsp of the saffron water for the yellow grains.
Wet your hands and press the paste thinly along a wide flat skewer (or two wooden skewers side by side) into a 20 cm strip. Dent it every 3–4 cm with your thumb — the heat gets in evenly and it won't split.

Get charcoal or a grill pan very hot. Grill 3–4 minutes per side and turn **only twice**. Fussing with it is how the meat falls off.

Grill the tomatoes alongside until the skins burst and char.

Mix the saffron water with the melted butter and brush it over the finished kebabs for gloss and aroma.
Bed the chelow on a platter and slide the kebabs off the skewers on top. Dust with sumac and serve with the grilled tomatoes, fresh herbs and raw onion.
Tips & Variations
Variations
- Jujeh kabab: Chicken marinated in saffron, lemon and yogurt — the other kebab every Iranian household makes.
- Kabab barg: Thin slices of marinated sirloin or tenderloin instead of ground meat.
- Chicken koobideh: Use ground chicken plus 2 tbsp olive oil, or it will crumble for lack of fat.
- Oven or pan version: No grill? Skip the skewers, shape oval patties and sear them in a hot pan, or broil for 10 minutes.
- As a sandwich: Roll the kebab into lavash with grilled tomato, raw onion and sumac — Iranian street food.
Tips
- Squeezing the onion dry is 90% of this dish. No amount of kneading saves a wet mix. Save the onion juice for rice or soup.
- 20% fat is non-negotiable. Lean cuts will fall apart on the grill, guaranteed.
- Don't shorten the 10-minute knead. Working the proteins is what creates the tackiness that acts as glue.
- Don't skip the chill. An hour minimum, overnight is better; warm paste won't stay on a skewer.
- Wet your hands so the paste spreads smoothly instead of sticking to you.
- Turn only twice. Over-flipping is the single most common reason kebabs drop off.
- Sumac isn't a garnish — it's the acidity the dish is built around. Lemon juice if you have none.
- No flat skewers? Go straight to patties rather than improvising. The result is much better.
