Do Piaza (Lamb with the Onion Added Twice)
An Afghan braise of lamb with onion, in which the onion goes in twice. The first lot cooks down until it stops being onion and becomes the body of the sauce; the second goes in late in big petals and stays whole enough to bite. The name is the method.

Mantu (Steamed Dumplings with Yogurt and Split Pea Sauce)
Afghanistan's dish for guests: thin-skinned dumplings filled with almost as much onion as meat, steamed, then layered with garlic yogurt below and a yellow split pea tomato sauce above. Mantu is finished less by the dumpling than by how the two sauces are stacked around it.
