Bougna (Kanak Earth-Oven Parcel)
The Kanak feast dish of New Caledonia: root vegetables and chicken packed with thick coconut milk into banana leaves and buried for two hours over hot stones. Passing the leaves through a flame so they fold without splitting, and sealing the parcel completely, is the whole technique — a leaking parcel simply dries out.
