Bryndzové Halušky (Slovak Potato Dumplings with Sheep Cheese)
Slovakia's national dish: dumplings made from a grated-potato batter pressed through a colander into boiling water, folded with bryndza sheep's cheese loosened with the cooking water, and finished with crisp bacon and its fat. Keeping the cheese off the heat is what makes or breaks it.
