Jāņu Siers (Caraway Curd Cheese Pressed into a Round)
One of Latvia's national dishes: a caraway cheese pressed into a round. Acid-set curd loses calcium and stays grainy; Jāņu siers makes it smooth and flowing anyway. Bicarbonate of soda undoes enough of the acid for the casein to take up water and turn plastic, egg binds it, and it is pressed hot and sliced cold.
